So I have been experimenting lately and trying to figure out a recipe for a healthier chocolate chip cookie that actually tastes GOOD, which has been difficult let me tell you! So I decided I needed to share this recipe with everyone 🙂 Believe it or not, these are gluten free, dairy free, and sugar free (except the chocolate chips, which are optional)!
So, here it is 🙂
Delicious but Healthy Chocolate Chip Cookies
1 & 1/2 cup almond meal
1/4 tsp sea salt
1/2 tsp baking powder
1 tsp cinnamon
3 Tbsp sugar free maple syrup (I used this)
1 tsp vanilla extract
2 tbsp melted coconut oil
1 tbsp almond butter, or nut butter of your choice!
1/3 cup dark chocolate chips (I used these)
Preheat oven to 320 degrees F
in a medium size mixing bowl, stir together all of the dry ingredients. (almond meal, salt, cinnamon and baking powder)
in another mixing bowl, whisk the coconut oil, SF maple syrup, almond butter & vanilla extract until well combined
add the egg to the wet mixture and whisk for another 2-3 minutes until light and bubbly
fold the dry ingredients into the wet mixture until just combined, then stir in the chocolate chips
roll tablespoon-sized amounts of dough into balls and flatten a bit onto a greased cookie sheet
bake for 10-15 minutes or until golden around the edges
allow to cool, store in airtight container
NOTE: if you don’t mind these not being sugar free, you can totally use regular maple syrup! It is definitely better for you to not have the sugar alcohol, but I am trying not to eat much sugar besides fruit right now so this is a great alternative for me 🙂
